One Pan Chicken, Rice, Lime, and Beans

* 1.5lbs chicken, chopped
* 1.5 cups no sodium chicken broth
* 1.5 cups brown rice (uncooked)
* 1 can low sodium black beans, rinsed
* 2 tsp lime zest
* 2 cloves garlic
* 8oz mushrooms, chopped *optional
* 4 green onions (separate white & green)
* 1/8 cup cilantro
* 3 tbsp lime juice
* 1/2 cup jalapeƱos

1.) Cook chicken in pan with 2 tsp olive oil. 
2.) Add in broth, rice, black beans, garlic, lime zest, mushrooms, white part of the green onions, and jalapeƱos. 
3.) Mix well and cook on low for 20 minutes or until rice is cooked. 
4.) Add in lime juice, cilantro, and green part of the green onions. 
5.) Serve immediately and enjoy!

*My rice took FOREVER to cook (1 hour), so next time I will just precook it.
