Hasselback Chicken - 21 DF Approved

Do you ever crave something cheesy and fattening, but don't want to succumb to a cheat meal? 

My husband has been VERY good with eating my healthy dishes, but he wanted something cheesy and filling and not just another "chicken" dish.  I was looking for recipes and came across Hasselback Chicken and let me tell you - it was a HIT!

Preheat oven to 400F
Serves: 4

Ingredients:

- 1 1/2lb Boneless, Skinless Chicken Breast
- 1lb Low fat Ricotta Cheese
- 1 cup Fresh Spinach (or frozen)
- 1/2 cup Shredded Mozzarella Cheese
- 1/2 tbsp Paprika
- Salt and Pepper to taste

Directions:

1.)  In a medium saucepan on medium heat, cook spinach and ricotta cheese until blended together into a creamy mixture.  I sprinkled garlic powder and onion powder for extra flavor.

2.) Slit chicken breast 4-5 times depending on the size of the breast.  Stuff slits with ricotta and spinach mixture.

3.) Season with salt and pepper to taste. Sprinkle paprika over the chicken then mozzarella cheese.

4.) Bake 25-30 minutes or until chicken is cooked thoroughly.
