Clean Lasagna Rolls

Ingredients:

- Whole wheat or brown rice flour lasagna noodles
- 1 jar no sugar added tomato sauce (I use Gia Russa Hot Sicilian - it is all natural no preservatives, no paste added, no puree added, no sugar added, gluten free)
- 15oz container part skim ricotta cheese
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 1/2 package chopped spinach (I used half of a 10oz package)
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp parsley
*Optional: salt and pepper to taste 

Preheat over to 350F

1.) Cook lasagna noodles (do not add salt or oil to water when boiling noodles).  Lay on wax paper to cool.
2.) In medium bowl, mix ricotta cheese, spinach, egg, 1/4 cup mozzarella cheese, parmesan cheese, and seasonings.  Stir well.
3.) Spread 2-3 teaspoons of mixture onto lasagna noodles.
4.) Spread 2 teaspoons of sauce onto mixture.
5.) Gently roll noodle.
6.) Sprinkle top with remaining mozzarella cheese.  Cover with foil.
7.) Bake at 350F for 30-40 minutes. Uncover and bake for additional 5 minutes.
8.) Enjoy!
